I've officially finished the first draft of my next book (which has nothing to do with bread): a memoir of the cross-country bike trip my friend and I did in 2003. So far, it's about 1200 pages long; I'm hoping to start editing and chopping it soon. It has a long way to go but so far has been a great learning experience.
I've also been reading some science journal articles about sourdough starter, with the intent of summarizing them somehow and posting the result on my website. I've found papers that say the handling of a starter is more important in determining its microbiological makeup than where it is created (i.e., it doesn't matter if you make it in Egypt or Delaware); but I have not yet found the paper with the data that actually proves this; so I will keep reading. More soon (I hope).

Peter Reinhart's new book on whole grains will be out soon. Months (years?) ago, Peter had several bakers write essays for the book, including me. My essay was about enzymes in bread. The publisher, however, cut the essays, so I have posted mine here on the "Excerpts and Errata" page. (The link is in the menu to the left, up top.) Peter told me that he refers to Bread Science in his book, which is exciting in itself. I know he worked hard trying to find whole grain recipes for his book that taste good and poof up like "normal" bread. Peter keeps a weblog and sends out recipes to an army of recipe-testers; if you're interested in all this, you can check out his weblog at http://peterreinhart.typepad.com/.
